Dried Bean Salad with Nuts

A fresh vegetable salad featuring roasted walnuts and tender dried beans, perfect for a light lunch or side dish.
Ingredients
- 60 g organic dried white bean (light)
- 60 g organic dried black bean (dark)
- Salt
- 60 g walnut kernels
- 1 onion
- 1 Garlic clove
- 2 tbsp butter
- 1 sprig thyme
- 2 tbsp Rapeseed oil
- 2 tbsp olive oil
- 1 tbsp walnut oil
- 3 tbsp white wine vinegar
- black pepper (freshly ground)
Instructions

Soak the dried beans briefly in water. Drain and simmer in lightly salted water for about 30–40 minutes until just tender.

Roast the walnuts in a dry pan without fat until fragrant.

Peel and finely chop the onion and garlic. Sauté both in hot butter until translucent.

Add the drained beans and torn thyme to the pan, cooking briefly to combine flavors.

Whisk together the oils and vinegar, seasoning with salt and pepper.

Toss the salad with the dressing, adjust seasoning, and serve warm or chilled.
