The healthy pineapple popsicles from Spoonsparrow are the perfect clean‑eating snack for hot days!

Ingredients

  • 600 g fresh pineapple flesh
  • 100 g raspberries
  • 200 g coconut cream (no sugar)
  • 50 g rice syrup
  • 1 Lime (juice)

Instructions

    Cut pineapple flesh into pieces, set aside 100 g. Gently wash raspberries and pat dry.

    Whisk coconut cream with rice syrup. Combine pineapple, coconut mixture, and lime juice in a blender and puree finely.

    Fill the mixture into eight popsicle molds, add 4–5 raspberries to each, and freeze for about 1 hour. Insert sticks and continue freezing for another 3 hours. To serve, release ice from molds and arrange on top of reserved pineapple pieces.
