Ingredients
- 2 egg whites
- 140 g sugar
- 140 g almonds (removed, finely ground)
- 70 g pine nuts
- 1 tsp lemon zest

Combine the egg whites with the sugar, almonds, and lemon zest in a bowl and beat with an electric mixer for about 15 minutes until a thick, firm dough forms.

Shape this dough into approximately 30 crescent buns and roll them in the pine nuts.

Place the buns on a parchment-lined baking sheet at a distance from each other and bake at moderate heat until light yellow.

Optionally roll the baked buns again in sugar and let them cool. Store tightly closed and serve with coffee.
