Simple and crispy‑delicious: The cinnamon waffles are a special highlight every winter.
Ingredients
- 150 g butter
- 125 g Brown sugar
- 1 egg
- 1 tbsp ground cinnamon (sifted)
- 1 tsp ground cloves
- 1 tsp ground cardamom
- 1 tsp lemon zest (organic, grated)
- 60 g peeled, ground almonds
- 300 g flour
- 1 tsp Baking powder
- flour (for the work surface)
Instructions

Beat butter, sugar and egg for about 10 minutes until frothy. Add cinnamon, cloves, cardamom, lemon zest and ground almonds; mix well. Combine flour and baking powder, then knead into the dough. Wrap dough in plastic wrap and refrigerate for about 1 hour.

Preheat oven to 180°C fan.

Roll out dough on a floured surface to about 4 mm thickness. Cut rectangles to match model size, place on floured models and press with a rolling pin to shape. Transfer dough pieces directly onto parchment‑lined baking sheet (you may also cut along the silhouette of the figurine). Bake cinnamon waffles in oven for 15–20 minutes and cool on a wire rack.
