Ingredients

  • 2 red bell peppers
  • 2 yellow bell peppers
  • 1 small cucumber
  • 1 onion
  • 1 Garlic clove
  • 8 tbsp olive oil
  • anise seeds
  • 125 ml Vegetable broth
  • 2 tsp Tomato paste
  • Salt
  • ground pepper
  • dill
  • 4 servings pikeperch fillets

Instructions

    Quarter the bell peppers, clean, rinse and cut into pieces. Peel the cucumber, halve lengthwise and remove the seeds. Cut cucumber into pieces. Peel onion and garlic and dice. Heat 4 tbsp olive oil. Add anise seeds. Sauté bell peppers for 5 minutes. Stir in vegetable broth with tomato paste. Combine with cucumbers and simmer with bell peppers for 5-6 minutes. Season with salt and pepper.

    Rinse dill, shake dry and finely chop. Mix into the bell pepper cucumber vegetables. Rinse pikeperch, pat dry and season with salt and pepper. Heat remaining olive oil and sear the pikeperch on the skin side for 3-4 minutes, then flip and cook another 2-3 minutes over low heat. Plate together with the bell pepper cucumber vegetables.
