Lemon Lamb Shank

Ingredients
- 4 small lamb shanks (≈380 g each)
- Salt
- black pepper (freshly ground)
- 4 onions
- 3 tbsp olive oil
- 2 tbsp dry white wine
- 500 ml lamb stock
- 3 untreated lemons
- 4 wild garlic leaves
- 1 tsp sugar

Preheat the oven to 170°C fan.

Wash, pat dry and season the lamb shanks with salt and pepper. Peel and dice the onions. Brown the lamb in a Dutch oven over hot oil all sides. Add the onions and cook until translucent. Deglaze with white wine, add lamb stock, cover and braise in the preheated oven for about 2½ hours.

Wash and pat dry the lemons; slice two into rounds and grate the zest of the third, then juice it.

About 20 minutes before the end of cooking, stir the lemon slices, 1 tsp lemon zest and lemon juice into the sauce.

Wash, shake dry and cut the wild garlic into thin strips. Add them to the sauce at the end, seasoning with salt, pepper and sugar.

Serve with grilled pita bread sprinkled with oregano and drizzled with olive oil.
