Ingredients
- 500 g penne
- Salz
- 1 untreated lemon
- 1 onion
- 1 Garlic clove
- 2 EL Butter
- 2 EL flour
- 150 ml Vegetable broth
- 200 ml whipping cream
- 60 g freshly grated Parmesan
- Pepper (from the grinder)

Cook the penne in salted water until al dente.

Wash the lemon hot, pat dry and zest it. Squeeze out the juice. Peel and finely dice the onion and garlic. In a hot pot, sauté them in butter until translucent. Briefly stir in the flour, then pour in the broth, lemon juice, and cream. Stir to make a creamy sauce. Use an immersion blender to puree gently. Fold in the parmesan (leave 2 EL) and zest, season with salt and pepper. Toss the drained pasta with the sauce and serve.
