- 4 pike perch fillets about 180 g each (skinless)
- Salt
- Pepper (freshly ground)
- olive oil
- 1 handful wild garlic
- 2 tbsp pine nuts
- 100 g Soft Butter
- 4 Tbsp breadcrumbs

Preheat the oven to grill mode.

Rinse the pike perch fillets, pat dry and season with salt and pepper. In 2 tbsp hot oil, gently sear each side for 1-2 minutes in a non-stick pan. Transfer to an oiled baking dish.

Rinse the wild garlic, pat dry and roughly chop the leaves. Blend together with pine nuts and butter until smooth. Fold in breadcrumbs until a spreadable paste forms. Season with salt and pepper and spread over the fillets. Smooth top and grill for 2-3 minutes until golden brown.
