Cod with Mustard Herb Crust

Ingredients

  • 720 g cod fillet (4 cod fillets)
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • 3 sprigs parsley
  • 1 egg yolk
  • 4 tbsp coarse mustard
  • 2 tbsp breadcrumbs

Instructions

    Rinse fish fillets under cold water, pat dry and brush with 2 tbsp oil. Season with salt and pepper and place on a baking sheet lined with parchment paper.

    Wash parsley, shake off excess moisture and chop. Separate the egg yolk from the white (use the whites elsewhere).

    For the crust mix remaining oil with mustard, parsley, egg yolk and breadcrumbs into a paste. Spread over the fillets and bake in a preheated oven at 250 °C (220 °C fan‑forced; gas: highest setting) for 8–10 minutes.
