Ingredients

  • 4 trout (ready to cook, about 250 g each)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp lemon juice
  • flour (for coating)
  • 4 tbsp Vegetable oil
  • 2 tbsp butter
  • 2 untreated lemons
  • 60 g parsley

Instructions

    Wash the trout inside and out under running water and pat dry. Season both sides with salt and pepper, then drizzle with lemon juice. Coat in flour on a plate or dish, tapping off excess.

    Heat oil and butter in a hot pan and add the trout. Cook over medium heat for about 2‑3 minutes until golden brown. Occasionally spoon fat over the fish. Flip the trout (using a spatula) and cook the other side for another 2‑3 minutes until browned.
