Pike Fillets with Shrimp Egg Mix

Ingredients

  • 2 hard-boiled eggs
  • 1 pickled cucumber
  • 125 g shrimp meat
  • 1 tbsp capers
  • 1 bunch chives
  • 4 pike fillets (skinless)
  • 4 tbsp flour
  • Salt
  • pepper (ground)
  • 2 Eggs
  • 100 g breadcrumbs
  • 600 g deep-frying oil
  • lemons (for garnish)

Instructions

    Dice the eggs and cucumber. Mix with shrimp and capers. Rinse chives, dry, cut into fine ribbons and add to the shrimp mixture.

    Rinse the pike fillets and pat dry with paper towels. Slice each fillet lengthwise once.

    Mix flour with salt and pepper. Beat the eggs in a shallow dish. First coat the fillets in the flour, tap off excess. Then dip in beaten egg, finally roll in breadcrumbs.

    Heat the frying oil to about 175°C (when a piece of white bread turns golden brown). Fry the fillets in batches until golden brown. Spoon the shrimp mixture over them and garnish with lemon wedges.
