Ingredients
- 4 zucchini
- 1 onion
- 200 ml white wine vinegar
- 1 tsp salt
- 2 tbsp freshly chopped parsley
- 1 tsp fresh thyme
Instructions

Rinse jars hot and let them drain on a kitchen towel.

Wash the zucchini, trim ends, and slice into rounds. Peel the onion, halve it, and cut into strips.

Bring vinegar with 200 ml water, sugar, and salt to a boil in a pot.

Add the zucchini and onion slices and cook for about 1 minute. Remove the vegetables and fill jars with them along with herbs.

Boil the brine again and pour over the vegetables so everything is covered.

Seal the jars and store cool and dark. Let the vegetables mature for about 1 week before eating.
