Pea and Bean Vegetable

Ingredients
- 300 g fresh peas (yields 100 g peeled peas)
- 100 g fine green beans (Princess or Kenya beans)
- Salt
- 1 red bell pepper
- 1 medium white onion
- 1 Garlic clove
- 2 tbsp Rapeseed oil
- 150 g yellow lentils
- 300 ml Vegetable broth
- Pepper
- 1 untreated lemon (slices)
- 1 green bell pepper (for garnish)

Peel peas from pods. Clean beans. Boil plenty of salted water and blanch beans for 5 min. Then add peas and cook everything for 3 min. Drain vegetables in a sieve, shock with ice water to keep crisp green color, then drain well.

Wash, clean and cut red bell pepper into diamonds. Peel onion and garlic, finely dice. Heat oil in a large non-stick pan. Sauté onions and garlic until golden yellow. Add lentils and broth and let simmer uncovered for 5 min on medium heat.

Stir in beans, peas and pepper diamonds, then simmer everything for 5 min. Stop stirring and let the dish steam over low heat until all liquid is absorbed by the lentils.

Season with salt and pepper, serve immediately in the pan. Add lemon slices and pepper wedges.
