Ingredients
- 1 kg yellow beans
- Salt
- 2 small onions
- 4 cloves garlic
- 300 ml white wine vinegar
- 1 tbsp sugar
- 1 tbsp mustard seeds
- 1 tsp peppercorns
- 2 tbsp freshly chopped bean herb

Wash, trim, halve or quarter the beans and blanch in salted water for about 8 minutes until firm. Peel the onions and cut into wedges. Peel the garlic, then blanch with the onions and beans for the last ~2 minutes. Drain well and fill jars.

For the brine, bring 1 tbsp salt, vinegar, sugar, peppercorns, and 300 ml water to a boil. Add the bean herb, pour the hot brine over the beans until covered and jars are filled. Seal tightly and allow to cool.
