Ingredients
- 20 eggs
- 3 small green chili peppers
- 3 small red chili peppers
- 1 Red Onion
- 1 white onion
- 3 sprigs rosemary
- 2 tbsp coriander seeds
- 2 tbsp mustard seeds
- 1 Tbsp white peppercorns
- 1 tbsp black peppercorns
- 1 tsp juniper berries
- 1 tsp allspice berries
- 7 bay leaves
- 1.5 l water
- 60 g salt
- Pepper
- Tabasco
- mustard
- Vinegar
- oil
Instructions

Hard boil the eggs, cool them and gently pinch the shells. Slice the onions into rings. Wash the chili peppers. Layer the eggs with onion rings, chilies, and spices in a tall glass. Bring the water with salt to a boil and pour over the eggs, ensuring they are fully submerged.

To serve, peel the eggs, cut them in half, remove the yolk halves and set aside. Spoon some mustard, vinegar, oil, Tabasco, and pepper into each white half and replace the yolks.
