Ingredients
- 6 Eggs
- 2 shallots
- 4 tbsp mixed herbs (parsley, chives, sorrel, tarragon...), chopped
- 1 tbsp mustard
- 75 g crème fraîche
- Salt
- Pepper (freshly ground)
- 75 g butter
- 1 tbsp White Wine Vinegar
- herbs (for garnish)
Instructions

Cook eggs for about 10 minutes until hard-boiled. Remove, cool, peel and cut in half lengthwise. Carefully scoop out yolks with a spoon.

Peel shallots and finely chop. Mix half of the chopped herbs, mustard, crème fraîche, and yolks together.

Season with salt and pepper. Fill egg halves with the herb-yolk mixture. Melt butter in a saucepan and stir in remaining herbs and vinegar.

Place eggs in a greased baking dish and drizzle with the butter-herb mixture. Bake in preheated oven at 200 °C (middle rack) until golden brown. Serve garnished with herbs.
