Pickled Radishes

Ingredients

  • 1 kg radishes
  • 1 Organic lemon
  • 200 ml white wine vinegar
  • 50 g raw cane sugar
  • 50 g salt
  • 2 fresh bay leaves

Instructions

    Wash and trim the radishes, leaving a little green on some if desired. Wash the lemon hot, pat dry, peel off wide strips of zest, then squeeze out the juice.

    Bring the vinegar with 200 ml water, sugar, salt, lemon juice and zest, and bay leaves to a boil. Add the radishes and simmer for 5 minutes. Remove from heat with a slotted spoon and transfer them into a prepared jar. Boil the liquid again and pour it over the radishes through a sieve so everything is well covered. Seal immediately and let cool.
