Ingredients
- 300 g fresh peperoni (preferably mixed red and green)
- 100 g shallots
- 0.5 l tarragon vinegar
- 4 tbsp sugar
- 6 tsp salt

Wash the peppers, trim stems, pierce several times with a toothpick to allow liquid penetration.

Peel the shallots, slice them thinly. Bring vinegar, 1/2 l water, sugar and salt to a boil; add peppers and shallots, bring to a boil once more, remove and place in a jar. Boil the brine again and pour hot over the peppers.

Ensure the peppers are fully covered by the brine. Seal the jar immediately and store in a cool dark place. After 4 weeks of aging they are ready to eat; shelf life about 1/4 year.
