Pickled Mushrooms

Ingredients
- 800 g mixed mushrooms (e.g., button mushrooms)
- 4 cloves garlic
- 1 tsp juniper berries
- 1 tsp peppercorns
- 1 tsp mustard seeds
- 2 sprigs Rosemary
- 4 fresh bay leaves
- 200 ml herb vinegar
- 1 tbsp sea salt

1. Clean the mushrooms thoroughly with a kitchen towel and slice them thinly. Peel and halve the garlic.

2. Bring the vinegar, sea salt, bay leaves, rosemary, peppercorns, juniper berries and about 400 ml water to a boil.

3. Add the mushrooms, bring to a boil again and simmer for about 5 minutes.

4. Transfer to prepared jars. The mushrooms should be completely covered with liquid.

5. Seal well, invert, let cool, then flip back over and allow to chill completely.
