Ingredients

  • 100 g buckwheat flour
  • 25 g wheat flour type 405
  • 1 lightly packed tsp dry yeast
  • 250 ml milk
  • 50 g crème fraîche
  • 2 Eggs (size M)
  • grated zest of 1 lime
  • clarified butter (for frying)
  • 200 g blackberries
  • 400 ml whipping cream
  • 2 packets stabilizer
  • 2 packets vanilla sugar
  • blackberries (and lime zest for garnish)

Instructions

    Mix buckwheat flour, wheat flour and dry yeast in a bowl. Add milk, crème fraîche, eggs and lime zest, then stir until combined. Let the dough rest for 20 minutes.

    In a small amount of clarified butter, cook 4 pancakes. Cool on kitchen paper.

    Rinse blackberries. Whip cream to stiff peaks, incorporating stabilizer and vanilla sugar as it rises.

    Assemble the pancakes into a tower with blackberries and whipped cream. Serve garnished with blackberries and lime zest.
