Beef Stew with Vegetables

Ingredients
- Lauch
- Sellerie
- 2 Möhren
- 1 Weißkohlblatt
- 1 Bund Petersilie
- 200 g Rinderbeinscheibe
- 250 g Suppenfleisch
- 1 Röstzwiebel
- 1 Zwiebel (gespickt mit einem Lorbeerblatt und 2 Nelken)
- Salz
- Pfeffer
- 2 Stangen Staudensellerie
- 2 Möhren
- 1 Stange Lauch
Instructions

Wash the vegetables for the broth. Wash the meat, pat dry. Prepare the onions as described above. For the broth, put all ingredients in a tall pot and cover with plenty of water. Salt and pepper.

Bring to a gentle boil, skimming foam and fat repeatedly. Simmer everything for about 1 hour.

Meanwhile clean, wash, peel, and slice the vegetables for the garnish.

After the time, remove the meat and cut into bite-sized pieces, removing any fat if desired. Strain the broth through a sieve into another pot.

Add the meat pieces and prepared vegetable garnish to the broth and cook until done.
