Ingredients
- 6 Eggs
- 100 g flour
- 75 g ground almonds
- 1 pinch salt
- 150 g sugar
- sugar (for dusting)
- 250 g marzipan base
- 125 g powdered sugar
- 1 tbsp orange liqueur
- 250 g apricot jam
- 2 egg whites
- 1 tbsp Lemon Juice
- 500 g powdered sugar
- zuckerfigur (optional)

Preheat the oven to 200°C fan. Separate the eggs and mix the flour with the almonds. Beat the egg whites with salt until stiff, gradually add sugar and beat again until stiff. Alternately fold in the yolks and the almond-flour mixture. Spread onto a parchment-lined baking sheet (about 30x40 cm) and bake for about 12 minutes until golden brown. Transfer to a sugared kitchen towel, remove the parchment and let cool. Then cut lengthwise into three equal strips. For the filling knead the marzipan with powdered sugar and liqueur, roll out to about 3 mm thick, and cut into strip-sized pieces. Warm the jam, strain it, and brush one third of a pastry strip with it. Place a marzipan strip on top, then another pastry strip, repeating until all strips are assembled. The final layer is marzipan. Cover well and let sit overnight. Cut the marzipan dough into squares. For decoration beat the egg whites with lemon juice until stiff. Gradually fold in powdered sugar until a thick glaze forms. Place the Petit Fours on a wire rack, coat with the glaze, let dry, and decorate with sugar figurines if desired.
