Mustard Sauce with Spring Onions and Tomato

A fresh mustard sauce featuring spring onions and tomato, perfect for a quick vegetable dish.

Ingredients

  • 2 Spring Onions
  • 2 Garlic cloves
  • 2 tbsp butter
  • 2 tbsp flour
  • 100 ml White wine
  • 250 ml vegetable broth
  • 1 tomato
  • 150 ml whipping cream
  • 2 tbsp coarse mustard
  • Salt
  • Cayenne pepper

Instructions

    Wash, trim and slice the spring onions into rings. Peel and finely chop the garlic. Sauté together with the spring onions (reserve 1 tbsp for garnish) in hot butter. Dust with flour and deglaze with white wine. Add vegetable broth and let simmer gently until slightly thickened. Boil the tomato briefly, cool, quarter, deseed and dice.

    Puree the sauce with half of the diced tomatoes, stir in cream and mustard, add more broth if needed or reduce further, season with salt and cayenne pepper. Serve garnished with remaining tomatoes and spring onions.
