Pepper and Zucchini Tart

A fresh tart featuring pepper and zucchini, perfect for a light meal.

Ingredients

  • 250 g flour
  • 1 pinch salt
  • 125 g cold butter
  • 1 egg
  • 2 yellow bell peppers
  • 2 zucchinis
  • 2 vegetable onions
  • 200 g Feta Cheese
  • flour (for the work surface)
  • butter (for the pan)
  • 2 sprigs thyme
  • 2 tbsp olive oil
  • Pepper (from the grinder)

Instructions

    Mix flour with salt, sift onto a work surface and create a well in the center. Distribute butter around the well and crack the egg into it. Roughly chop all ingredients with a knife and quickly knead into dough by hand. Shape into a ball, wrap in cling film and refrigerate for 30 minutes. Preheat oven to 180°C (convection).

    Wash the vegetables. Halve the peppers, remove seeds and cut into 1.5 cm cubes. Slice or shave the zucchinis thinly. Peel the onions, halve them and slice into strips. Crumble the feta. Roll out the dough on a floured surface slightly larger than the pan and line the pan, lifting a rim. Prick the base several times with a fork.

    Wash thyme, shake dry, pluck leaves from stems and finely chop. Heat oil in a skillet and sauté vegetables for 2-3 minutes while stirring. Season with salt, pepper and thyme. Spread vegetables over the tart base, sprinkle feta on top and bake in preheated oven for 25-30 minutes. Remove, let cool briefly, carefully flip onto a plate and serve cut into pieces.
