Basil Tart

Ingredients
- 200 g Whole Wheat Flour
- 1 pinch salt
- 75 g butter
- 1 egg
- 2 tbsp Sour cream
- olive oil (for the tart pan)
- flour (for working)
- 3 handfuls basil (about 100 g)
- 4 Spring Onions
- 2 Garlic cloves
- 1 untreated lemon
- 400 g ricotta
- 80 g grated parmesan
- 4 eggs
- Salt
- pepper (from grinder)
Instructions

Knead flour, salt, butter pieces, egg and sour cream quickly into a smooth dough. Wrap in cling film and chill for 30 minutes.

For the filling rinse basil, shake dry, pick leaves and finely chop. Wash, trim and slice spring onions into thin rings. Peel garlic and finely mince. Wash lemon hot, pat dry, grate zest and squeeze juice. Whisk ricotta with Parmesan, lemon zest, juice and eggs. Fold in basil, spring onions and garlic, season with salt and pepper.

Brush tart pan with oil and preheat oven to 200°C fan.

Roll dough on floured surface, line the tart pan, shaping a rim. Spoon ricotta mixture into crust and bake for about 45 minutes until golden brown.

Remove from oven and serve warm or cooled.
