Ingredients

  • 400 g penne
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 200 g Broccoli florets
  • 2 cloves garlic (finely chopped)
  • 2 tbsp parsley (chopped)
  • 4 tbsp pine nuts (lightly toasted)
  • 200 g Green beans
  • 4 tbsp olive oil
  • Salt
  • a splash lemon juice

Instructions

    Cook penne according to package instructions in plenty of salted water until al dente.

    Wash, trim, seed the bell peppers and slice into strips.

    Trim the green beans and cut diagonally in half.

    Blanch the vegetables in boiling salted water: peppers about 2 minutes, broccoli florets about 4 minutes, beans about 8 minutes. Shock in cold water and drain well.

    Sauté garlic gently in not too hot oil, add the vegetables and stir in pine nuts. Mix in a splash of pasta cooking water to create a light sauce and let everything mingle briefly. Season with salt and a splash lemon juice, then serve mixed with parsley.
