Greek Souvlaki

Ingredients
- 1 kg lamb shoulder (pre-cut for cooking)
- 2 Garlic cloves
- 1 lemon (juice)
- 1 tsp Dried oregano
- 150 ml olive oil
- Sea salt
- ground pepper

Step 1: Prepare all ingredients on the work surface.

Step 2: Cut the trimmed and dry-milled meat into roughly 2 cm cubes.

Step 3: Skewer onto soaked wooden sticks and place side by side in a shallow dish or on a baking sheet.

Step 4: Peel the garlic and slice it for the marinate.

Step 5: Squeeze the lemon juice over the slices.

Step 6: Mix the garlic with the lemon juice, oregano, and oil thoroughly.

Step 7: Season with salt and pepper.

Step 8: Drizzle the mixture over the skewers. Cover and refrigerate for at least 2 hours to marinate.

Step 9-11: Drain excess liquid and grill on a preheated grill for about 10 minutes per side, basting occasionally with remaining marinade.
