Penne with Tomato Sauce

Ingredients
- 500 g penne
- 1.2 kg ripe tomatoes
- 2 red chili peppers
- 1 onion
- 2 Garlic cloves
- 2 EL olive oil
- 1 TL sugar
- 1 EL tomato paste
- 100 ml Vegetable broth
- ketchup (for refinement)
- 4 sprigs basil
- Salt
- Cayenne pepper

Blanch the tomatoes for a few seconds, shock them in cold water, peel, quarter, seed and dice. Peel the onion and garlic cloves, halve them and finely dice. Wash the chili pepper, cut it lengthwise, remove seeds (leave some if you like it spicier), discard the white membrane and finely dice.

Heat oil in a pot and sauté the chili, onions and garlic; add sugar, stir in tomato paste. Pour in vegetable broth and bring to a boil once. Add the diced tomatoes, season with salt and pepper, and simmer over low heat for about 15 minutes. Meanwhile wash basil, shake dry and chop. Cook pasta according to package instructions in plenty of salted water "al dente".

Taste the sauce with ketchup, salt and pepper. Drain the pasta and divide among four preheated plates; pour sauce over it and sprinkle with basil. Add parmesan, ciabatta and wine as desired.
