Linguine with Mozzarella and Tomatoes

Ingredients

  • 500 g linguine
  • 400 g cocktail tomatoes
  • 2 mozzarella
  • 2 Garlic cloves
  • 1 chili pepper
  • 100 ml White wine
  • 1 tsp powdered sugar
  • 2 tbsp chopped parsley (roughly chopped)
  • Salt
  • ground pepper

Instructions

    Cook pasta in plenty of salted water according to package instructions until al dente.

    Wash and halve the cocktail tomatoes.

    Peel garlic cloves and slice them thinly.

  4. 4.

    Halve the chili pepper lengthwise, remove seeds, and chop.

  5. 5.

    Caramelize powdered sugar in a pan, add tomatoes and garlic, continue caramelizing. Add chili and deglaze with white wine. Simmer for 2 minutes, then toss drained linguine with a splash of pasta water to loosen sauce. Finally stir in parsley and season with salt and pepper. Serve in bowls topped with crumbled mozzarella.
