Ingredients

  • 150 g dark couverture
  • 100 ml milk
  • 2 tbsp crème double
  • 2 tbsp sugar
  • 2 tbsp butter
  • 3 tbsp Raisins
  • 2 tbsp pine nuts
  • 350 g Penne
  • Mint leaves
  • chocolate shavings

Instructions

    Soak the raisins in lukewarm water. Lightly toast the pine nuts in a dry pan without fat, then set aside.

    Melt the chopped couverture over a bain-marie. In a saucepan, bring milk, crème double and sugar to a boil while stirring; fold in the melted couverture and return to a boil. Remove from heat and whisk in butter pieces until the sauce is smooth and creamy.

    Meanwhile, cook the penne in plenty of boiling water until al dente, drain and set aside. Toss the pasta with the chocolate sauce, drained raisins and pine nuts, plate, and garnish with mint leaves and chocolate shavings.
