Ingredients

  • 150 g almond flakes
  • 60 g pine nuts
  • 300 g liquid honey
  • 2 egg whites
  • 70 g pistachios (finely chopped)
  • 4 baking sheets (12 x 20 cm)

Instructions

    Lightly toast the almond flakes and pine nuts in a dry pan without oil, then let them cool in a bowl.

    Bring the honey to a boil over medium heat while stirring constantly; remove from heat. Whisk the egg whites until stiff, fold into the honey, and continue stirring until it turns light brown and caramelized. Fold in the almond flakes, pine nuts, and pistachios.

    Spread the mixture onto two baking sheets, cover each with another sheet, and press them together. Cover the sheets with a board, lightly weight them, and let dry for about 1 hour. Cut into rectangles.
