Ingredients

  • 1 pack of thick beans (frozen)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 1 Garlic clove
  • 4 tbsp olive oil
  • 500 g penne
  • Salt
  • 2 anchovy fillets
  • freshly ground pepper
  • lemon juice (or light balsamic vinegar)
  • Basil

Instructions

    Thaw the thick beans according to instructions. Then place them in a sieve and drain, removing any hard outer shells.

    Quarter the bell peppers, clean, rinse, and cut into pieces. Peel and dice the onion and garlic.

    Heat olive oil. Sauté onion, garlic, and pepper for 5 minutes.

    Cook penne in plenty of salted water until al dente according to package instructions.

    Rinse anchovy fillets, pat dry, and finely chop. Combine with thick beans and add to the peppers; heat for 2-3 minutes. Season with salt, pepper, and lemon juice (or vinegar). Rinse basil leaves, strip from stems, and toss with the pasta and bean-pepper mixture before serving.
