Pecan Cake

Ingredients
- 250 g soft butter
- 200 g sugar
- 1 vanilla sugar
- a pinch of salt
- organic lemon zest
- 4 eggs
- 125 ml milk
- 400 g flour
- 100 g cornstarch
- 1 packet baking powder
- 80 g coarsely chopped pecans
- butter (for the pan)
- parchment paper
- 1 egg yolk
Instructions

Cream butter with sugar and vanilla sugar, add a pinch of salt, lemon zest, and gradually fold in eggs until frothy.

Whisk flour, cornstarch, and baking powder together, then slowly stir into the batter along with milk and half the pecans.

Pour the dough into a greased wooden loaf pan lined with parchment paper (or a buttered loaf tin), smooth the top, and sprinkle remaining pecans over it.

Bake in a preheated oven at 180°C on the middle rack for about 1 hour. Brush the cake with whisked egg yolk ten minutes before the end of baking and continue baking. Let the finished cake cool in the pan (or let a loaf tin cool slightly, then transfer to a wire rack).
