Peas and Sunchokes with Butter

Ingredients

  • 400 g peas
  • 600 g sunchokes
  • 1 onion
  • 3 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • a pinch of sugar
  • 100 ml Vegetable broth
  • 2 tbsp freshly chopped parsley

    Break open the pea pods and remove the peas. Wash, peel, trim ends, and cut the sunchokes into diagonal slices 3-4 mm thick. Peel and finely dice the onion. Sauté in half the butter until translucent, then add the peas and sunchokes; season with salt, pepper, and sugar. Deglaze with broth and simmer covered for 6-8 minutes, adding more broth if needed.

    Finally stir in the remaining butter with parsley (do not let it get too hot), taste, and serve.
