Ingredients
- 800 g black salsify
- 100 g mushrooms (e.g., shiitake)
- 4 persimmons
- 2 tbsp lemon juice
- 1 tsp Honey
- 150 ml Vegetable broth
- Salt
- ground pepper
- mint leaves for garnish

Peel the black salsify and cook in salted water for about 10 minutes. Drain and set aside.

Clean the mushrooms and leave whole or cut into pieces depending on size. Wash the persimmons, peel if desired, and cut into pieces. Arrange the persimmons, mushrooms, and black salsify in a baking dish. Mix lemon juice with honey and broth, then pour over the vegetables. Season with salt and pepper and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 15 minutes.
