Black Turnip Vegetable with Lemon Sauce and Lemon Balm

Ingredients

  • 1 kg black turnips
  • 3 untreated lemons
  • 3 shallots
  • 1 tbsp butter
  • 250 ml milk
  • 200 ml vegetable broth
  • Salt
  • a pinch of freshly ground nutmeg
  • 250 ml heavy cream (at least 30% fat)
  • 2 egg yolks
  • 2 tbsp lemon balm

Instructions

    Peel the black turnips with rubber gloves under running water and cut into pieces. Wash the lemons hot, zest one with a zester, squeeze out the juice of the other, add the black turnips and cover with water.

    Remove skins from the shallots and finely dice them. Heat butter in a pot, briefly sauté the shallots, then drain and add the black turnip pieces. Pour in milk and vegetable broth, simmer for about 25 minutes until the turnips are tender. Season with salt and nutmeg. Near the end of cooking whisk the cream with the egg yolks and stir into the turnips. Warm gently but do not boil further. Wash and finely chop the lemon balm. For garnish cut the remaining lemon into wedges.
