Ingredients

  • 375 ml water
  • 1 lemon (unprocessed)
  • 0.5 cinnamon stick
  • 2 tbsp sugar
  • 4 fresh pears (e.g., butter pears)
  • 100 g dark chocolate (min 70% cocoa content)
  • 100 g bittersweet chocolate (about 50% cocoa content)
  • 200 ml whipping cream
  • 1 tsp pear brandy (optional)
  • 150 ml whipping cream
  • 1 packet gelatin powder
  • 2 tsp vanilla sugar

Instructions

    Bring the water with grated lemon zest, squeezed lemon juice, cinnamon stick and sugar to a boil for the pears. Meanwhile, carefully peel the pears so that the stem remains attached. Place the fruits in the boiling liquid and gently simmer until tender, about 10 minutes, turning them once during cooking if desired. Remove the pears from the broth, drain, and let cool.

    For the chocolate sauce, bring the whipping cream to a boil. Add the chocolate pieces and stir briefly until combined. Season the sauce with pear brandy to taste, if desired.

    Whip the remaining whipping cream with gelatin powder and vanilla sugar until stiff peaks form, then fill a piping bag fitted with a star tip.

    Pipe one portion of whipped cream into each of four dessert glasses, place a pear on top, and drizzle with chocolate sauce.
