Apple-Pear Compote

Ingredients
- 50 g Raisins
- 3 tbsp rum (or apple juice)
- 400 g apples
- 400 g pears
- 4 tbsp sugar
- 150 ml dry white wine
- 300 ml apple juice
- 2 tbsp chopped, peeled almond kernels
- 1 cinnamon stick
- 1 tbsp Cornstarch

Soak the raisins in rum. Peel, quarter, core the apples and pears and cut into bite‑sized pieces. In a pan caramelize the sugar and add the fruit pieces and raisins.

Briefly sauté, deglaze with wine, 170 ml juice and rum, stir in almonds and cinnamon stick, then simmer for 5 minutes over medium heat. Thicken with cornstarch mixed in 3 tbsp apple juice, remove from heat and serve.
