Pearl Barley Salad with Green Vegetables and Mint

Ingredients

  • 800 ml vegetable broth
  • 200 g pearl barley
  • 400 g broccolini
  • 250 g peas (fresh split or frozen)
  • Salt
  • 500 g zucchini (4 baby zucchinis)
  • 5 g mint (1 handful)
  • 2 tbsp balsamic vinegar
  • 2 tbsp Lime juice
  • 3 tbsp grape seed oil
  • Pepper

Instructions

    Bring the broth to a boil. Add the pearl barley and simmer for 30 minutes over low heat. Drain well and let cool.

    Meanwhile, trim and halve or quarter the broccolini. Blanch with peas in boiling salted water for 3 minutes; shock in ice water and drain. Slice zucchini into long quarters. Wash mint, pat dry, and pluck leaves.

    Combine all prepared ingredients in a large bowl. Whisk together balsamic vinegar, lime juice, grape seed oil, salt, and pepper to make the dressing. Pour over the salad and toss gently.
