Ingredients

  • 2 red mullets (600 g each, ready to cook)
  • 2 large banana leaves (Asian market)
  • 3 red peppers
  • 2 garlic cloves
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 4 Tbsp lime juice
  • 4 tbsp oil
  • black pepper from the grinder
  • 1 lime
  • a few coriander stems

Instructions

    Rinse and pat dry the red mullets. Soak banana leaves in water.

    Clean and dice the peppers. Peel and roughly chop the garlic. Blend fish sauce with lime juice, oil, peppers, and garlic. Season with black pepper.

    Brush the red mullets with the Marinade. Rinse and slice the lime. Wash the coriander. Brush each mullet with the Marinade, place on a banana leaf, top with lime slices and coriander. Add remaining Marinade. Wrap the mullets in the banana leaves and secure with wooden skewers. Marinate for 1 hour in the refrigerator.

    Grill the wrapped mullets for about 15-20 minutes per side.
