Ingredients

  • 250 g mostly firm potatoes
  • Salad salt
  • 500 g green beans
  • 1 small radicchio
  • 2 tbsp white wine vinegar
  • 1 egg yolk
  • Salt
  • freshly ground pepper
  • 4 tbsp oil
  • 1 onion
  • 1 thumb‑long piece of horseradish root
  • 8 matjes fillets

    Drain beans, shock in cold water, then drain. Drain potatoes, peel, and dice. Pour the dressing over the potatoes and let sit for 30 minutes. Mix in beans and radicchio. Rinse matjes fillets, pat dry, and serve with the salad.
