Pear Muffins

Ingredients
- 350 g pears (1 pear)
- 2 tbsp lemon juice
- 150 g butter
- 300 g flour
- 125 g sugar
- 1 packet vanilla sugar
- 0.25 tsp Salt
- 0.25 tsp ground cinnamon
- 1 tsp Baking powder
- 2 Eggs
- 125 ml milk
- 24 paper muffin cups
- butter (for greasing)
- 2 tbsp lingonberries (jar)
- 200 ml whipping cream
- mint (for garnish)
Instructions

Place two paper cups together and set them on a baking sheet.

Peel, quarter, core the pears and cut the quarters crosswise into thin slices. Drizzle with lemon juice. Melt butter and let it cool.

Combine flour, sugar, vanilla sugar, salt, cinnamon, and baking powder. Whisk butter with eggs and milk in a large bowl, then gradually fold in the dry mixture. Quickly fold in the pear pieces.

Fill the paper cups with batter and bake the muffins in a preheated oven at 200°C for 20-25 minutes. Let cool.

Drain the lingonberries. Whip the cream to stiff peaks and fold in the berries. Spread the cream on top of the muffins and garnish with mint.
