Spicy Carrot Soufflé

Ingredients

  • 150 g Carrots
  • 3 tbsp Flour
  • 1 tsp garam masala
  • 4 eggs
  • 60 g Butter
  • 4 tbsp heavy cream
  • 3 tbsp crème fraîche
  • butter (for the molds)
  • bread crumbs (for the molds)

Instructions

    Preheat the oven to 200°C (392°F) with both top and bottom heating.

    Peel and finely grate the carrots.

    Mix the flour with the spices. Separate the eggs. Whisk the butter with the yolks until frothy. Then alternately fold in the cream, crème fraîche, and grated carrots. Next fold in the beaten egg whites and the flour mixture. Season with a pinch of salt. Grease the molds with butter and dust them with bread crumbs. Pour the batter into the molds and bake in the hot oven for about 15 minutes until golden brown.
