Pear Chocolate Tartlets

Ingredients
- 10 g butter
- 25 g whole wheat flour
- 1 Organic Orange
- 50 ml Milk (3.5% fat)
- 5 g cocoa powder (1 tsp)
- 60 g coconut palm sugar (4 tbsp)
- 100 g dark chocolate
- 3 eggs
- 1 pinch salt
- 4 pears

Grease four oven-safe molds with butter and dust with 10 g flour.

Wash orange halves in hot water, pat dry and trim a thin strip of zest. Bring milk, cocoa powder, zest and 2 tbsp coconut palm sugar to a boil in a small pot.

Meanwhile chop the chocolate. Remove the milk mixture from heat, discard the zest, add the chocolate and let it melt.

Separate the eggs. Beat egg whites with a pinch of salt until stiff peaks form, incorporating the remaining coconut palm sugar. Whisk yolks and remaining flour into the melted chocolate. Fold in the beaten egg whites and pour the batter into the molds.

Wash and pat dry pears. Place one pear in each mold.

Place the molds in a large oven-safe dish and carefully pour about 2–3 cm of hot water around them. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) on the lower rack for 25–30 minutes. Remove and serve immediately.
