Pear Cheese Wafer

- 175 g flour
- 1 tsp Baking powder
- 1 pinch salt
- 1 egg yolk (M)
- 100 g butter
- legume for blind baking
- 100 g bacon slices
- 2 pears
- 100 g Swiss cheese
- 2 Eggs (size M)
- 150 g crème fraîche
- 1 pinch salt
- pepper from grinder
- a splash lemon juice
- parsley (for garnish)
Instructions

Mix flour with baking powder and salt. Add egg yolk and butter pieces, quickly knead into a smooth dough. Wrap in foil and refrigerate for 1 hour.

Roll the dough on a lightly floured surface into a round disc (~32 cm diameter). Line a greased wafer pan (28 cm diameter) with the dough, level the edges. Cover with parchment paper and sprinkle dried peas over it. Bake in preheated oven at 200°C (gas: 3-4, convection: 180°C) for 15 minutes. Then lower temperature to 180°C (gas: 2-3, convection: 160°C).

Meanwhile cut bacon into strips. Quarter pears, peel and remove cores. Slice pears into wedges. Grate cheese. Separate eggs. Beat egg whites until stiff peaks form. Mix yolk with crème fraîche, cheese, a pinch of salt and pepper; fold in beaten whites.

Remove peas and parchment paper. Arrange bacon and 2/3 of pear wedges on the dough. Pour the egg-cheese crème fraîche over them and place remaining pear wedges decoratively on top. Brush pears with lemon juice. Bake wafer for about 40 minutes, covering with parchment after ~25 minutes. Serve garnished with parsley.
