Herb Potato Soup

Ingredients
- 300 g starchy potatoes
- 150 g celeriac
- 4 Spring Onions
- 1 Garlic clove
- 1 EL vegetable oil
- 150 ml dry white wine
- 800 ml vegetable broth
- 100 ml whipping cream
- 50 g fresh chopped herbs (e.g., watercress, sorrel, cornflower, chervil, parsley)
- 50 g crème fraîche
- Salt
- a splash lemon juice
- freshly grated nutmeg
- ground pepper from the mill
- watercress for garnish

Peel and wash the potatoes and celeriac, then dice them. Wash and trim the spring onions, cutting them into rings. Peel the garlic clove and finely chop it. Sauté the spring onions in hot oil for 1–2 minutes, deglaze with wine. Add the potatoes and pour in the broth. Simmer gently for about 20 minutes.

Add the cream and herbs to the soup and blend until smooth. If desired, let it simmer a bit longer or add more broth to reach the preferred consistency. Finish with crème fraîche and season with salt, lemon juice, nutmeg, and pepper.
