Pear and Pomegranate Muesli

Ingredients
- 0.5 untreated lemon
- 400 ml dry white wine
- 60 g sugar
- 0.5 vanilla pod (halved lengthwise)
- 0.5 cinnamon stick
- 0.5 tsp cloves
- 2 cardamom pods
- 1 star anise
- 2 pears (e.g., Williams Christ)
- 120 g plain yogurt
- 50 g low‑fat quark
- 1 tbsp liquid honey
- 2 pomegranates
- 1 tsp lemon juice
- 8 tbsp crunchy muesli (ready‑made)
Instructions

Wash the lemon hot, dry it, peel the zest and cut off the rind; bring to a boil with wine, sugar and spices in a pot and simmer over medium heat for about 10 minutes.

Meanwhile peel the pears, halve them lengthwise and carefully remove the core.

Add the pears to the broth and let them gently simmer for about 5 minutes. Remove the pot from the heat and allow the pears to cool in the broth.

Whisk the yogurt with quark until smooth and season with honey.

Halve the pomegranates, extract the seeds and catch the juice; mix the juice with lemon juice and the seeds.

Remove the pears from the broth, cut into bite‑sized pieces and arrange them in dessert glasses.

Pour the yogurt over the pears and top with muesli. Sprinkle the pomegranate seeds with their juice and serve immediately.
