Granola with Maple Syrup and Pistachios

Ingredients

  • 3 tbsp butter
  • 400 g hearty rolled oats
  • 30 g almond slivers
  • 0.5 vanilla bean (scraped seed)
  • 40 g unsalted, peeled pistachio nuts
  • 3 tbsp chopped, peeled walnuts
  • 3 tbsp maple syrup
  • 3 tbsp water
  • 60 g dried, chopped cranberries
  • 40 g dried, chopped apricots

Instructions

    Preheat the oven to 130°C fan. Line two baking trays with parchment paper.

    Melt the butter in a small pot. In the meantime, mix all ingredients except the cranberries and apricots in a large bowl with the melted butter. Spread the mixture evenly on the trays and roast for about 35 minutes until golden brown, turning several times. Let the granola cool, then fold in the fruits. Store airtight in jars.
