Pear and Elderberry Soup

Ingredients
- 400 g elderberries
- 2 pears
- 400 ml unsweetened black currant juice
- 200 ml unsweetened apple juice
- 2 tbsp honey
- 1 untreated lemon
- 1 Vanilla bean

Wash the elderberries and let them drain well. Peel the pears, quarter them, remove the core, and cut the quarters into pieces.

Bring the black currant juice with the apple juice, about 150 ml water, and the honey to a boil, adjusting sweetness as desired.

Cut a piece of lemon zest and add it along with the squeezed lemon juice and split vanilla bean to the pot. Add the pear pieces and elderberries, let them simmer for 2-3 minutes, remove the vanilla, and serve the soup warm or chilled.
