The peanut cookies from Spoonsparrow: a real eye‑catcher that also convinces taste-wise!
Ingredients
- 220 g powdered sugar
- 1 pinch salt
- 1 tbsp rum
- 320 g flour
- 80 g ground almond kernels
- 2 Eggs
- Bitter almond aroma
- 50 g butter
- 100 g peanuts
- 2 tbsp honey
- 1 tbsp cocoa powder
Instructions

Mix the dough ingredients, knead into a smooth dough and wrap in foil; refrigerate for at least 30 minutes. Then roll out on a floured surface to 2–3 mm thickness and cut small fir trees with a cookie cutter. Place the fir trees on parchment‑lined baking sheet and bake in preheated oven at 180°C for about 8 minutes until pale yellow. Remove and cool.

For the filling, finely grind the peanuts and mix smoothly with honey and cocoa. Glue two fir trees together with the peanut cream. Optionally decorate the peanut cookies with icing or dust with powdered sugar.
